Third PlaceCantique del Noel – Shawn Iman

 

8 lbs light LME,

3 lbs amber LME,

3/4 to 1 cup corn sugar (as an alcohol "booster") in the boil, 

1 lb honey malt (steep),

1/2 lb chocolate malt (steep), 

1 oz cascade (60 minute boil),

1 oz cascade (last 30 minutes of boil for bittering).

 

Now for the last fifteen minutes of boil, you will steep:

     2-3 whole cloves, 1 tsp nutmeg, 1 oz bitter orange peel, 2 oz cinnamon.

 

I call this recipe Cantique de Noel (named after one of my favorite Christmas songs). Enjoy and Happy Thanksgiving.
